Here it is! Karen’s Quirky Kalendar
This past June, we pulled into a little piece of land in Chapel Hill, NC I found on HipCamp. When I opened the door, right there at my feet was this big whimsical-looking puffy white mushroom (you can see it on January’s photo above). Little did I know it was the beginning of a journey I have turned into a calendar, and later, I am turning into a book.
Looking at this majestical mushroom, childhood fantasies of fairies came rushing back. I can not be the only one who believed fairies lived under mushrooms. Maybe it was because I grew up watching the Smurfs. In fact, I think, maybe, it was a subliminal connection to a Smurf T-shirt I found this past summer at a shop and just had to have it. A foreshadowing? Channeling? I do not know, but it was something.
The very next day, Zazu (my cat) took off into some side woods and low and behold, as I grabbed his leash, right there, right beside my hand, was the most beautiful mushroom (above pic) I had ever seen. I had no idea that “fairy” mushrooms actually existed. It was beautiful, large reddish-orange with yellow polka dots. I grabbed my fairy furniture and set to work. I was glad I did, because the next day there was no evidence of the mushroom ever existing. At least I had the proof that it did. And, so the adventure began.
Did you know, North Carolina has more mushrooms growing wild than any other state? I joined some Facebook Mushroom groups to be able to find where everyone finds theirs. I have been hiking through the woods in search of mushrooms and I have found some beauties. The only one that has eluded me is the blue mushroom. I found some tiny ones but was hoping for a good blue scene. Maybe next year.

Why a calendar?
How did I come up with a calendar? Well, Iwas on a plane back to AZ a couple of weeks ago, weeding and categorizing my photos. A lovely lady one row back interrupted me wanting to know about my photos. She had nothing to do and was engrossed with my photos. I had no idea someone was watching me zooming, folder organizing, colour correcting and deleting. She asked if she could take a look, suddenly I had an audience all looking at my photos. I felt sickly nervous of what they might say. It is quite vulnerable to share a piece of myself especially when it seems what I was doing could be considered childish. To my utter amazement, everyone was enthralled with the details and wanted to know the story. I talked about my adventure and that I was planning a book (Which I am going to share with you all; the details, the stories starting in the new year). The lady said she would not be interested in a book - my heart sank - but, would love a calendar - my soul’s curiosity rebounded quickly with the idea of a new adventure. And, just like that a calendar has been manifested! You see, input is sometimes the best path to follow.
This year has been a transitional ride, and come January, I'll spill the beans on pivoting and how you too can feel darn good about it.

CLASS A Recipe
Well, I could go ahead and share a mushroom recipe. That could be funny or maybe it is just a tad bit too soon? Well, I am doing it anyway. None of the mushrooms in my recipe were from my fairy collections-promise! Some of those mushrooms were either deadly or could result in a psychedelic trip which is just a tad too much adventuring for me!
Chicken Mushroom’n
This one is definitely an all day forget it until you are ready to eat it kind of dish. The longer it cooks, the more the flavors merry. If you are lucky enough to have leftovers, wait until you reheat it the next day!
I decided I was going to make mushroom soup with the left overs so, I added 2 cups of chicken broth. If you are thinking wow, that sounds like a plan, then add 2 cups of chicken broth.
You can serve this as is, or add in some steamed veggies, chunks, mashed or riced cauliflower. If you are not low-carbing, then go for some rice, mashed or boiled potatoes.
Prep time; 10 minutes
Cook time 8 hours
Serves 4
Freezes well
1 tsp or so of olive oil
4 chicken thighs skin on is even better
1-2 tsp Celtic sea salt and freshly cracked black pepper
1 tsp each dried sage and thyme
1/4 cup chopped onions
1 pound mushrooms, any kind excpet button, cut into chunks
3 garlic cloves, minced
1 cup chicken broth
Rub or brush the chicken with the olive oil and sprinkle with Celtic sea salt and freshly cracked pepper. Add to a rectangle glass container. Add the remaining ingredients, place a piece of non-bleached parchment paper over top of glass dish, then the lid. Add to the HotLogic, zip it up, plug it in and let it do it’s magic for at least 8 hours or more. Serve into a bowl and enjoy.
OK, so there was a lot in this week’s post, but it was all good right?
