I do not want you to just cook a meal than flop in front of the tele or drive erratically down the road with one hand on the steering wheel while the other is stuffing crap food down your throat. I want you to sit, breathe three deep belly breaths kick in the rest-and-digest and savor the layers of flavors; really taste the sweetness of the peppers, the earthy tones of spices and the grounding of the beef.
The nice thing about making this recipe is, if you are cooking for one or two people, you have leftovers that can be prepped for later in the week or frozen for a later date. What a great way to have a healthy “fast food” meal. You can easily double this recipe to really get your food prep on! Make this once, and you will surely double it the next time.
I do not usually add tomatoes to my ground beef tacos, but this time, it just felt right to kick up the flavour meter!

Taco Bowl
Ingredients
4 servings
1 tb avocado oil
1 small red pepper, cut into thick slices,
1 small yellow pepper, cut into thick slices
1 small red onion, finely chopped
1 lb ground beef
1 tb dried chili powder, cumin, dried paprika
1/2 tb dried coriander
2-3 garlic cloves, minced
14 oz can tomatoes - drained
1 tsp Celtic sea salt
1 tsp fresh cracked black pepper
For serving
1 lime, sliced
Sour cream
1tb dried paprika
1/2 tb dried coriander
For garnish
1 small Lime, sliced
1/4 cup cheddar cheese
Fresh cilantro
Heat the avocado oil in a large skillet over medium heat. Toss in the red and yellow pepper slices to the skillet and sauté until they are slightly tender, about 3-5 minutes. Remove from the pan, add to a bowl and set aside.
Add the sliced red onion stiring to coat in the remaining oil in the skillet and sauté until it becomes translucent about 2-3 minutes. Do not brown the onions.
Add the ground beef to the skillet and cook until it's browned, breaking it apart with a spatula as it cooks. If you find the beef is not breaking down easily, you can pulse it in a food processor, then add it back to the skillet.
Add the the 1 tablespoon each of the dried chilli powder, cumin, dried paprika and half a tablespoon of the dried coriander Stir well to evenly incorporate the spices.
Add the minced garlic stir to combine evenely and cook for another 30 seconds
Stir in the drained tomatoes, Celtic sea salt, and fresh cracked black pepper. Allow the mixture to simmer for 5-7 minutes, allowing the flavors to merry.
To serve, add 3/4 cup to a bowl or plate. Add some slices of peppers around the beef. Add a dollop of sour cream, sprinkle with cheddar cheese and fresh chopped cilantro, freshly squeezed lime juice over the entire bowl and enjoy! So good!
If you are prepping containers for freezing and, or reheating make sure your cold ingredients, like extra veggies, sour cream and cheese are packed to be removed before reheating.
