Hey, I have something completely different and this has not been shown anywhere else. I was trying to work on a 10 minute show style for Youtube but, with my client work, radio show, book writing and hopefully new travel adventures in our coach it’s sort of got pushed to the back burner.
I was ready and pumped to give you all another hotel room speciality recipe however, after getting our coach back for a weekend turns out some families of mice moved in and the propane was not turned off to the fridge so, I have a moldy mess, mouse poop to clean when we get our coach back. So, that is a loooong way of saying, I did not want to purchase a bunch of ingredients that I will not be able to take with me because I have a fridge to clean and a whole lot of washing and cleaning ahead of me.
I did not want to renege on your monthly recipe, so here it is. Soooooooo, Please 🙏 could you spare a whole 11 minutes and 20 seconds to watch this show and let me know what you think ? I am trying my best to capture your attention any way I can. I also got to thinking, if you do watch this and really like it, would you be interested in this format over weekly writings? If so, what would that look like?
This 10 minute pilot show includes an introduction that will not be apart of upcoming shows, so keep that in mind. If 11 minutes and 20 seconds seems way too long then fast forward to 1:08 and skip the intro. 🙏

Class A Recipe
This recipe is in the video above. I have made these lamb chops so many times because they are just soooo good! I hope you like them as much as I do. And, FYI, I typically eat all my red meat medium rare. Although these are not medium rare, they are so juicy and tender you will not miss it.
Karen’s Melt in your mouth Lamb Chops
1 cup cherry tomatoes
1 cup onion chopped or sliced thin strings
1 -2 tb of avocado oil or ghee
2-4 lamb chops
Marinade
4 tablespoons lemongrass (white and light green part copped)
1/3 cup cilantro (chopped)
3 tablespoons mint
2 tablespoons ginger (grated)
2 cloves garlic (minced)
1/4 cup lime juice
2 tablespoons coconut aminos
2 teaspoons fish sauce
1/4 cup olive oil
1/4 cup Thai basil (torn) fresh or 1 tb dried (optional)
1/4 teaspoon fresh ground black pepper
Add 1-2 tablespoons of avocado oil to a small pan, heat over medium heat. Add onions, stir to coat with oil, cook for 1-2 minutes. Add tomatoes, stir to coat and cook for 1-5 minutes.
While this is cooking, prepare the marinade; to a small bowl add lemongrass, cilantro, mint, ginger, lime juice, coconut aminos, fish sauce, olive oil and stir to combine.
Place thawed lamb chops, in a dish. Massage marinade on both sides of lamb chops. Add onions and tomatoes over top, spread to cover.
Add parchment paper to the lid of dish, or if you want more of a thinner sauce do not use paper.
Cook at least 4 hours, however, the longer the more you are incorporating and marrying the flavors.
Serve with a sprinkling of fresh basil and some freshly ground black pepper.
Serve with cauliflower riced, red rice, or green beans. You could also sauté up some spinach with some olive oil, garlic and sea salt and pepper.
This is soooo good! Nothing like adventuring and coming home to a good healthy gut loving good meal!

Humphrey is hilarious! Great info as always, Karen! Lamb chops recipes is great, but I will ditch the fish sauce…shellfish!
