Trying to coordinate getting my husband out of the coach, and letting me have some peace of mind to come up with a good recipe for this month, turned into quite the task. So, I thought I would give you a little extra bonus. I thought, why not go on adventure. So, we are whipping up apples and then having some fun (a little too much fun) for entertaining guests with cookies, ice cream and whipped cream. While the HOTLOGIC is doing most of the grunt work, it frees us up to adventure to Hardee Lakes Park in Bowling Green Florida, checking out some organic Turkish towels and hang out at the Haunted Mizpah Hotel in Tonopah Nevada for a little ghost hunting. I’ll be honest, I didn’t get much but, I did have some weird things happen. Alas, I will save that for another day.

Lovely Apple Brown Betty with a Kahlúa

Sometimes you just need a little simple sweetness in your life. Truth be told, this recipe was for some friends that were coming over. It’s not often I go for ice cream. If you are thinking of making this, a good salted caramel ice cream would be an added layer of heaven indeed.

As for the apple recipe, it is my go to any time I am craving apple pie or an apple baked crumble. You can spruce it up or keep it simple the possibilities are endless.

Add any ingredients you want and have some fun. What can you come up with?

Apple Brown Betty

  • Medium 4 Cup container with lid

  • HotLogic Mini

  • One lemon, juiced

  • 5-6 medium apples

  • 1/2 tb vanilla

  • 1-2 tb Cinnamon

  • 1 tsp powdered Ginger

  • 1/8th tsp allspice

  • Vanilla heavy whipping cream

  • pint or so of ice cream, vanilla or salted caramel

Add freshly squeezed lemon juice to the dish. Peel apples, remove core and cut apples into small chunks adding to lemon juice as you cut them up. Stir to coat the pieces in lemon juice. Add the vanilla cinnamon, ginger powder and allspice stir to coat apples.

Place a piece of non bleached parchment paper over dish, place lid on top. Add to HOTLOGIC and cook 4-6 hours or you can let it cook overnight.

Before serving, whip up some heavy whipping cream into whipped cream. Add apples to serving bowl, place whipped cream on top. Sprinkle with a little extra cinnamon and enjoy. Or go a little crazy with what you see in the video.

I served this for a diner party and really spiced it up with some ice cream and Kahlúa and a cookie on the side. Easy peasy indeed!

To keep it low calorie, go for making your own whipped cream from whipping cream and use a keto ice cream and voila! A nice low calorie treat!
